Kauma 99.4% Dark Chocolate Couverture is hand-crafted with organic ingredients in small batches to create a delicate, rich flavor and velvety texture. A slab of our Kauma Dark Chocolate Couverture consists of 99% pure cocoa content with 48% cocoa butter.
Indulge yourself in this earthy treat that is sure to make your taste buds sing.

How can I use it?

Girl in a jacket This chips are designed to be used for baking deacent cakes and pastries, It melts easily on heat making it an ideal filling for desserts, an extra treat in chocolate mousse as well.

Girl in a jacket A little bit goes a long way when adding to puddings, cakes or soufflés.

Girl in a jacket Enrobing your desserts for delicious layering of cocoa, Ganache that can be used as a glaze or drizzle, a filling for layering cakes and under fondant sculptured cakes.

Does-this-need-tempering

Does this need tempering?

Couverture chocolate needs tempering if using in molding and enrobing. Also for better release from moulds, a good snap and shine on the finished product is also very important for the shelf life of your chocolate creations.

How to store?

Girl in a jacket Always store your couverture chocolate in a cool and dry place away from sunlight, well-wrapped, and at room temperature around 18c.

Girl in a jacket If using for moulding and enrobing, the working temperature should be around 24c and humidity below 50% (ideally in an air-conditioned room)

Girl in a jacket Humidity & higher temperatures may cause chocolate to develop shades of white on the surface this is purely cosmetic & won’t affect the fitness for usage

Girl in a jacket If you store the coverture chocolates in the fridge make sure it is wrapped tightly.

Girl in a jacket When ready to use, make sure the couverture chocolate is at room temperature for at least 30 minutes prior to opening the packaging to avoid the condensation which could lead to poor tempering of chocolate.

How does it taste?

the 99% is unsweetned and bitter, 75% is bittersweet, 50 to 55 % is semisweet

How is 99% ,55%,75% different from each other ?

The percentage mentioned are the content of cocoa present in the chocolate. Hence,the taste differs as per the cocoa content.

Can we eat directly as a chocolate? I mean open and eat like other chocolate?

– Yes! all the chocolates are ideal for snacking in small quantities.

What is the shelf life of this product?

– 12 months after manufacturing

Is it vegan and gluten friendly?

All our chocolates are vegan and gluten free. We use only coconut milk and organic cane sugar.

I havent used 99% dark chocolate how is it different?

-99 % is chocolate in pure form with no added sugar, hence the taste is intense and bitter

Can I use it without tempering?

All the couverture chocolates need tempering for good texture and shine.

I recieved the chocolate, but it has white shades on it, is it safe for consumption?

Humidity & higher temperatures may cause chocolate to develop shades of white on the surface. This is purely cosmetic and won’t affect the fitness for usage

Does it come in bars or callets?

99% and 55% couverture chocolate comes in bars. We also have couverture chocolate chips in varying percentage for baking.
