Does this need tempering?
Couverture chocolate needs tempering if using in molding and enrobing. Also for better release from moulds, a good snap and shine on the finished
Product and also very important for the shelf life of your chocolate creations.
How to Store?
Always store your couverture chocolate in a cool and dry place away from sunlight well wrapped & at room temperature around 18 c.
Humidity and higher temperatures may cause chocolate to develop shades of white on the surface, this is purely cosmetic and won’t affect the taste.
